I agree that inline editing doesn't seem to be the ideal pattern here. I'm assuming you've chosen it on the basis that a user is likely to edit one or two fields in one visit? If that's not the case and users are likely to want to update multiple fields, then a global edit mode that simultaneously reveals empty fields and puts the whole form into edit mode might be better anyway. You'd then have an update button to save/verify data an return the form to read-only.Ryan's collapsed accordion approach is an excellent one but just to give you an alternative, you might have an 'add another field' button of some kind at the bottom of the form. On click/tap it would present a picking list of empty meta fields. On click/tap of a tag in the list, the field would be added and the user dropped into editing it. I'm not clear from your post whether there's a fixed list of tags that users can choose to populate or not, or whether users can add their own tags as well. That might have a bearing as the number of tags would affect the ideal pattern.Hope that helps.
